Project Title: Fulfilling Diabetic Taste Buds with Asian Cuisines

When life gives you lemons, make lemonade… with Splenda. Being a diabetic requires one to be vigilant of what they eat and drink. However, not all diabetics take their time to inform themselves or have access to programs that do inform diabetic patients. As a result, my exploration aims to explore how the lack of access to diabetic-friendly programs would affect Chinese Americans in NYC, along with creating one or two recipes that are diabetic-friendly and cater to Chinese American proclivities. Although there is not a specific expectation of my findings, I hope to contribute to the process of maintaining a healthy well-being for Chinese Americans. Finding the effects would help prevent the improper self-care for Chinese American diabetics. When diabetes goes mistreated, patients are at highly prone to develop further complications such as kidney damage, eye damage, or an increased risk for heart disease or stroke.
